Production Area: North Eastern part of Potenza Province. All vineyards are located within the DOC Aglianico del Vulture area that includes 15 Townships and particularly includes Venosa, home town to Orazio, famous Latin Poet
Harvesting time: From 15th to 25th October
Harvesting Method: Hand pick using 12/15 Kg boxes. Harvest takes place starting early in the morning and provides for immediate transportation of grapes to the winery
Vinification: Pressing and destemming. Must is then transfered to small tanks for a short skin maceration. Selected enzymes and yeasts are inoculated at this point and must is kept at controlled temperature of 22° C. Then it gets separated from skins, filtered and ferments in stainless steel tanks at 18°C until it reaches 60g/l of residual sugar.
Sparkling Method: Charmat at low temperature in order to enhance, as much as possible, the specific characteristics of Aglianico
Best way to drink it: Within 18 months from production

Fine and persistent perlage. Floral and delicate bouquet with hints of raspberry and cherry. Taste moderately sweet showing an harmonious balance. Food pairing and Serving Temperature: a dynamic sparkling wine that meets the taste of young and international consumers. Ideal as an aperitif, it is an excellent companion of traditional Mediterranean dry pastry and beautifully colors a refined evening with friends. Best to serve at 8°-10°C
